  The Courses

Each Course leads to individual Certificates, all 6 Royal Thai Cooking Courses leads to a Diploma in Royal Thai Cooking. The Courses can be taken individually, in a 5-6 week block, or together, in a full day, intensive 3-week course.

All 10 Thai Cooking classes lead to a Grand Diploma in Thai Cooking. These Courses can also be taken individually or in an intensive 5-week course, with the Thai Banquet course included. We also grade each student daily; for individual Certificates there are no final exams, but you have to have an average grade of 70 % to achieve a Certificate. For Diploma courses there are final exams, in addition to daily grading, also with a minimum of 70 % average to pass.

 

Lingua franca at the School is English, although we do speak several other languages in-house, such as Thai, Burmese, Lao and the Scandinavian languages. Translators for French, Italian, Japanese, Spanish, Portuguese, German, Malay, Tagalog, Hindi, Urdu, Mandarin and various Chinese languages can be arranged, at special request, please notify the School at least 3-4 weeks before You start the course(s).   Individual translators normally charge around US$ 3-400 per 6-day week.

 

If desired, You will be picked up in a convenient location in Bangkok, or the Seaside Resort of Pattaya, Sunday afternoon and driven to Bang Saen. After You have checked in at Your Hotel, the Course starts with an introduction, over a welcome dinner on Sunday evening, where we will go through what You will learn and do over the coming week.

 

Monday morning at 09:00 or 13:00, (depending on Course), the Course starts, and runs through Friday, when we will finish with another sumptuous dinner. Unless You are staying for another Course, checkout at Your own leisure on Saturday (before 12:00, noon).

 

It is highly recommended, especially for Fusion Courses, that all Students bring their own ordinary knives. (We do have knives; but most Chefs’ are more comfortable with their own J )

Monday to Friday, all classes start with a short theory before you have hands-on practice. One of the days we will rise early to go to the local fruit and vegetable markets. The fish market gets its freshest produce around midnight – 05:00.

 

As we take great pride in our School, all our Master Chefs are highly educated, experienced and skilled; for example “Le Cordon Bleu Grand Diplome” graduates handle all Fusion Cooking classes. We also have a very low student to Chef ratio,

4 - 1, besides classes being maximized to 8 students per kitchen.

 

The Courses all include:

 

·         The Course(s). Use of chef’s uniform, knives, etc.

·         Single room at a nearby (5-min) private Resort, with breakfast; - lunch and/or dinner (Monday – Friday) at the School (depending if you have morning, afternoon or full day courses). http://www.gourmetthailand.com/YourAccommodation.html  

·         All lunches and dinners include beers and of course, juices and soft drinks. All rooms are single occupancy, h/c bath, air-con, fridge, Satellite TV, etc. Rooms are available from Sunday, noon, to Saturday noon.

·         Free use of the Schools facilities, such as swimming pool, bar, lounge, etc. Students taking more than one course, back-to-back, are welcome to stay weekends between courses, free of charge. Please note that you MUST have an International Drivers Licence, to be able to drive in Thailand.

 

 

Royal Thai and Regional Thai Cooking Courses

Until not too many years ago Royal Thai Cooking was a style of Thai cuisine basically reserved for the Royal Family of Thailand. It is a refined Central Regional Thai cooking, which emphasizes flavour and presentation. It is also using a much larger variety of ingredients than ordinary day-to-day Thai cooking.
